Follow Us Friday - Fun for All!

Today is going to be a busy and phenomenal day!  We have so much fun stuff planned and I can't wait for this day to begin!  Unfortunately little Roman is battling a horrible diaper rash today.  Last night it was so bad the poor little guy couldn't sit and could barely walk.  I'm happy to report that today it's doing better after being slathered in extra strength diaper cream all night.  The slathering will continue all day along with all this fun stuff!

7:00am - Breakfast
Today Roman was up bright and early, so early in fact John hadn't left for work yet.  Roman gets so excited when he sees his Dad in the morning!  He loves to watch John wash his face and shave in the morning, so I moved his stool in there so he could stand up to the counter and do man things with John while I made breakfast.  Roman had eggs with veggies and milk along with a bit of my toast that he nabbed.

7:15am - Get ready and play!
I also lucked out having John still at home this morning because that means I was able to get most of my morning routine done before he left for the morning.  Once John left for the day Roman ran around and played with his toys and the dogs while I finished my makeup.  I even caught him sitting in his Ninja Turtle chair watching Garfield on TV.  It only lasted for a minute or two but it was really cute!

8:10am - The frosty outdoors
Now that Roman has figured out how to tell us when he wants to go to the basement, he's also figured out that this works for going outside.  It was a pretty frosty morning so I bundled Roman up and we headed out for some fun.  We started with a lovely walk around the crescent which took a whopping 20 minutes.  No we don't live on a crescent that is a mile long, we do however live on a crescent with a lot of vehicles parked on the street, especially on a Saturday.  Roman had a blast checking all the tires (and trying to open a few doors *face palm*) but the highlight for him was definitely walking along the busy street outside our crescent to watch all the vehicles drive past.  This is probably the slowest part of the walk because we have to stop and watch each vehicle as they past.  This road is a major artery in and out of or end of town so there is a lot of traffic, much to Roman's delight and my dismay.

I thought we had seen our fill of vehicles when we got home but clearly Roman didn't feel the same.  As soon as we got back to the house he ran into the garage and hopped up on his tricycle.  With cold noses and hopeful hearts we headed back out in search of the ultimate vehicle, and we were not disappointed.  We spotted the ever elusive cement mixer which had Roman nearly falling off his tricycle with awe.  I don't think it gets much better than that and Roman seemed satisfied with it so we went inside.  At least that's how I like to think it would have gone.  Of course Roman had different plans.  Instead we had to go check out the trains and the leaves.  Roman is turning out to be a fall lover just like his mama!

9:00am - Snack
Roman finally agreed to come inside when I said he could help me make his snack.  All that involved was getting an avocado and container of yogurt with berries and granola out of the fridge but it was enough to bribe him into the house.  Bronx was nice enough to help clean up from the snack and Roman and Wonder Woman also pitched in!

9:15am - Nap
Normally I would have been panicking if Roman went down for a nap at this time, but because were heading out to a craft sale at 10:00am I was happy to let him get in a little rest before the big adventure. 

My Mom and Stephanie came over to my house at about 9:30am before heading to the craft sale.  I swear every time Mom comes over she has a ton of stuff for me that she either found or I forgot there.  This time she brought over a recipe binder that I made up for her years ago.  She used to have all her old recipes on cards, that you could barely read between the writing and the food splatters, so I typed them up and put them in a binder for Christmas one year (super inexpensive and awesome gift for any Mom!).  Over the last few years she has accumulated more recipes that need to be added, and because I no longer have the original file (smooth move Kendra) I have to retype the entire binder.  I'm actually kind of excited about it!  I'll get to discover some cool recipes and it's another project for me.  Not that I need one...

10:00am - Craft Sale
I finally had to wake Roman up so we could meet my aunts at the sale.  I tried my usual soft "Roman, Roman, it's time to wake up sweetie", but that didn't work.  So I tried "Roman, Grandma's here do you want to come see Grandma?".  The little devil's eyes flew open, flashed a huge smile, and jumped up like a kangaroo!  I guess he was a little excited to see Grandma!


I love a good craft sale but sometimes the crowds can be a bit much.  Plus people seem to have no regard for strollers what so ever.  During the first 10 minutes of being there a man wasn't paying attention to where he was going, tripped on our stroller wheel and almost landed on top of another stroller!  Does it not occur to people to look behind or beside them before the start walking when they know they're in a crowd?  Anywho, I found my soul purpose for visiting the craft sale, Peanut Brittle from Homemade Cravings so I was happy.  Roman the little monkey scored free samples from every food table we passed.  I guess it is handy to have a cute baby with you no and then!  Roman's favorite items were definitely the lamps from the Chocolate Moose.  I used to have a lamp from them in his room and he was in total awe.  He would have been happy standing there in Grandma's arms all day I'm sure.  He did manage to visit the arms of my Aunt Arlene as well as Stephanie while we were there though.

12:30pm - Lunch
We went all healthy on this lunch I tell ya.  Now I don't want people to freak out saying "oh my gosh I can't believe you give your kid McDonalds!".  Yes he had chicken nuggets and fries for lunch (they were supposed to be apple slices!) but he also had yogurt and milk, plus he was going to have a very nutritious supper.  Everyone like a little McDicks once in awhile whether they admit it or not. Mom, Stephanie and I all decided to go with Big Mac meals with fries and Coke Zero (because that makes it healthier).

1:00pm - Closing Stephanie's party
Stephanie recently decided to have a Steeped Tea basket party so we decided to close it out today since they had an awesome promo on that meant she got an extra bag of free tea!  Thank heavens my Mom was there because it would have been impossible to do with Roman attempting to nab my laptop.  She managed to distract him with these water balloon things that two of his aunts bought him at the craft sale.  It backfired a little on Mom though because all Roman was concerned with was chewing on them.  Shocking right?  I am happy to report though that as of today (one day later) he has still yet to actually chew through one.  I swear Mom took pictures of their adventure but I don't think she had the camera turned on.... Luckily I managed to snap one!

3:00pm - Visit from Aunt Kathy
My Aunt Kathy was with us at the craft sale and then went shopping downtown with a couple of my other aunts afterwards.  She had a box of tomatoes for my Mom and Mom had a few bracelets for her so she stopped by for them to swap.  While she was here I just had to show her how much Roman loves the book her and my Uncle Bill got Roman for his birthday.  He has just recently discovered this book, titled "Charlie the Ranch Dog" by Ree Drummond (the Pioneer Woman on the Food Network).  The book is about 20 pages long but he really only cares about three pages in the entire book, and we re-read these three pages several times a day.  Don't believe me?  "Wait...what's that?  Methinks I hear the sound of approaching beasts!".  "Daisy! No!".  "Raroooowhooooo".  Thank you, thank you, I will be doing book readings in person Tuesdays and Thursdays.  Roman smiles and giggles through the entire thing and as soon as you finish the howl he's trying to flip back to the first of the three pages.  I guess it's better he loves books than TV but sometimes I hide the book under the couch....
3:50pm - Snack
This was one of the smaller snacks Roman has ever had.  he only had an orange but I think he was more tired than he was hungry.  Of course he would never admit to that.  No toddler ever admits to being tired until they are completely breaking down in tears and can barely stand or walk a straight line because they are so exhausted.

4:15pm - Bye-bye Grandma!
Mom and Stephanie ad to hit the road and I thought this might be the chance I needed to get Roman to have another nap.  I knew it wasn't the best timing but I also knew that he really needed to just lay down and sleep even if it was only for an hour.  Of course that wasn't happening, so we ended up playing cars, reading Charlie the Ranch Dog and trying to pick out an outfit for my night out!  Of course the latter Roman wasn't impressed by and lasted all of about 2 minutes before he started screaming.
5:15pm - Dad's Home!
Always a highlight in this house as Roman and the dogs all rush the door when they hear the garage door open.  While Roman was distracted by John I headed into the bathroom to get ready for Stacey's birthday party!  This is the first time I have gone out with my friends at night since Roman was born so I was super excited.  With my makeup touched up, hair done and photo snapped of the boys' supper (chicken packet leftovers) I kissed my boys and headed out the door.


6:00pm - Last minute stuff
Of course I didn't have the insight the fill up my car with gas the day before I was leaving so I could just hit the road.  I also ended up having to hit a drug store to pick up a card and gift bag for Stacey since I didn't have time to do it earlier today like I planned.  I guess now Stacey knows that I was super unorganized but that's ok!  The party was at 7:00pm so I ran my errands as quickly as I could and hit the highway.

6:30 - Perspective
Just outside of Moose Jaw I came upon a serious and terrifying accident that had obviously just happened.  The dust was still settling and it appeared that a tandem semi had collided with a half ton crossing the highway.  The only sign on the half ton on the highway was the topper because the truck, semi and one trailer had all fallen down a steep embankment.  The highway was littered with debris and people (who had obviously seen the accident) were just getting out of their vehicles to help.  I didn't think I would be of any help so I continued on my way.  It's amazing how life has a way of slowing you down and bringing everything into perspective.  Only an hour ago I had been worried about what I was going to wear to  party and when John was going to be home, when really I should be thankful that John was coming home and that I ad those precious moments with Roman.  Life can change in a blink of an eye and if I hadn't stopped to get gas that might have been me at the bottom of the embankment. 

7:00pm - Doing a drop
I probably haven't mentioned this before but I'm a dealer.  Being a dealer means I often have to stop and make drops at different locations.  Tonight's location was the parking lot of Home Depot.  I was obviously running late so I knew this had to be quick.  I found the truck and the woman hopped out to grab her package.  After Mom had her tomatoes (that she forgot at my house) we said our goodbyes and I was off!

7:20pm - Happy 30th Birthday Stacey!!
It's been a long time since I got the chance to hang out for an extended period of time with my friends, especially Roman free.  We spent the night catching up on work, school, family, and reliving the old days.  Some of which is probably better we just forget and some that would be fun to relive; V step!  I also managed to squish all rumors of pregnancy by ordering a Vodka Special.  I thought Amie and Stacey were going to fall off their chairs when they heard I was getting liquor because it has been years since I ordered a drink.  I'm happy to report that it was pretty darn tasty, although Amie would disagree since I nursed it so long the ice melted...

It's been an ever longer time since I've been to Bushwakkers and I forgot how great their food is.  I thought I would be adventurous and try something new and exiting, but after Amie said she was getting the chicken fingers and I read the description, I knew that was what I was going to have.  I have this odd habit of panicking and changing my mind at the last minute and ordering whatever they are ordering.  This odd affinity also affects Amie and Trellyn the most.  It usually works out for the best though because I don't remember the last time I had a ad meal with friends.  Which probably says more for the company and the establishments.  I swear I had the best of intentions to take a photo of my food before I started stuffing it in my face but between the conversations and the overwhelming smell of deliciousness I couldn't help it.

The entire night was amazing and I can't wait to get together with everyone again.  I am however a little disappointed that we didn't get to play the game Amie had planned.  I think I would have rocker the "Have a conversation with an intimate object for 1 minute" or the "do the chicken dance 6 feet from the table" challenge.  I guess there is always next time!

10:10pm - Party like a rock star
Until 10:00pm that is.  You can tell it's a 30th birthday when everyone at the table starts yawning at 9:30.  We weren't bored, but let's face it, we aren't as young as we used to be.  We're getting up there and as we age we need more sleep!  With goodbyes said I headed to my car to head home.  I had an hour drive but I don't mind it, plus it was neat driving at night.  I never drive at night anymore!  That's for them young folk!

All in all it was an amazing day filled with fun, laughs and great people.  Did I have too much sugar, pop, deep fried food and too little sleep?  Absolutely.  But I also had a huge helping of being just Kendra.  Not Kendra the Mom just Kendra the friend and sometimes you need that to recharge your batteries!

Homemade Salsa

This summer has been a bit of an odd ball.  We've had some really hot days and some pretty chilly ones.  All this fluctuation in temperature has caused our garden to produce tomatoes at a rate that we've been able to keep up with.  Meaning that we've been eating them as they ripen.  We managed to build up a bit of a stash of them this last few weeks so I knew I wanted to can some.  We don't have enough to make tomato sauce so I decided to make salsa!


My aunt Kathy made this salsa last year and it was so delicious that John and I gobbled down our jar in no time flat.  She was nice enough to share the recipe with me so I wanted to share it with you!  I love salsa with tortilla chips as a snack or used as a sauce in Taco Salad.  I love homemade salsa because I don't have to worry about the hidden salt or sugar, I know exactly what is in the jar.


Now that my mouth is watering, let's get to the recipe!

Salsa (Makes 5 - 500ml jars)
7 cups chopped tomatoes (about 6 pounds)
2 cups chopped onions
8 jalapeno peppers, chopped with seeds removed
3 cloves garlic, minced
1 can tomato paste (156ml)
3/4 cup lime juice
1/2 cup (lightly packed) chopped parsley
1/2t cumin
1t sugar

Combine all ingredients in a large pot.  Bring to a boil and boil gently until the salsa reaches the desired consistency, about 30 minutes.


To prepare the jars for canning, submerge the jars, rings and lids in hot water.  Remove jars from water and allow to dry.  Fill jars with the hot salsa making sure to wipe away any salsa from the rim.  *TIP - sit the jars on a plate when your filling them, this way any drips will be caught and you only have to wash one plate!  Top with a lid and ring and tighten as much as possible.  Set the jars aside until the tops pop which means your delicious salsa is sealed!


I might be completely alone on this one but does anyone else get super excited when you hear the jars popping?  I really don't think there is a more satisfying sound when your canning food.  The satisfaction I get from that sound is unmeasurable.

What's in your treat bags? - Halloween 2014

I know a lot of people have a hate on for the Halloween treat bag but I love them and here is why.  I love giving the little goblins a variety of treats, especially with the different ages and allergies you can encounter these days.  When you're handing out 5 different things it takes way to much time to grab each item to give to each kid, especially if you get a good size herd at your door.  With the treat bags I only have to grab one bag per kid and they are on their way in a flash.  Another great reason for using treat bags, they make it seem like the kids are getting a lot of stuff, even if there are only a couple pieces of candy in it, and this greatly reduces the risk of your house being egged.  Do kids still do that kind of stuff?

I usually leave buying my candy until as late as possible so John and I don't eat it all.  So the other day Roman and I made a trip to Bulk Barn to pick up some delicious treats for the tick-or-treaters.  I wanted to get a few different things so I knew Bulk Barn would be the best place to go since I could buy just enough to fill my treat bags, and not have boxes of candy laying around the house.  Plus I could get a good variety of wrapped treats.  I ended up getting Jolly Rancher suckers, caramel pumpkin balls, gumball eyes, peanut free chocolate spiders, and rockets.  I had also picked up pencils, erasers, and boxes of stickers at Dollar Giant a month or so ago.  For the littlest goblins that can't necessarily eat the candy, I picked up a bag of mini Playdoh containers at Wal Mart.  I like to include some non-candy treats as well because I loved to get them as a kid.  It was always fun to take your fancy new pencil to school the next day.  Or maybe I was the only kid that had a love for school supplies at that age - a love that continues today!


I may also be the only person on the planet that actually enjoys assembling the treat bags.  Last year Roman was nice enough to help me by sitting in his bouncy chair and swatting at a stuffed zebra for the 30 minutes that it took.  We all know there is no way that he would sit still for that long now so when he went down for his nap I retreated to my craft room to assemble the bags.  Speaking of the bags these little devils gave me a good amount of trouble.  Granted I picked them up at Dollar Giant as well, and they were 40 for $1 so I shouldn't be surprised, but I had a heck of a time getting the tops to seal.  After they started sealing the bags started pulling away from the zippers.  Arg!  Surprisingly after I made it through about 10 bags or so, both problems stopped and the bags worked like a charm.  I was also pulling from the back of the package, so if you buy these bags I suggest starting at the front to save yourself the hassle.  After the battle with the bags I decided to distress by testing out a caramel pumpkin and seeing what the stickers looked like.  It's all about quality control people!

 
I ended up with a few different versions of my original treat bag because I ran out of different things at different times.  As I ran out of things I tried to keep the value of the treat bags close to the same by adding more of another item and surprisingly I was pretty close on all of them!  Below are the contents of the different bags along with the cost of each bag.





Now you might be thinking that 70-79 cents per kid seems a little steep.  So, I made a trip to Wal Mart to see what the cost per mini chocolate bar worked out to be since they are the most common Halloween treat.  They had two different options at my Wal Mart; $6.50 for 50 bars (13 cents per bar) or $15 for 90 bars (17 cents per bar).  From my experience most people usually give out 3-4 bars per kid so that works out to 39-68 cents per goblin.  For an extra 10 cents you look like the coolest house on the block, and your chance of being egged is drastically reduced!  The Playdoh worked out to 42 cents each which when added to a treat bag is a little pricey but those little guys are so cute I don't mind spending the extra money!

What was/is your favorite or most memorable Halloween treat?  When I was little there was an old retired prison guard that handed out apples every year.  All of us kids got so excited when we got an apple from Walter.  Luckily we lived in an extremely small town and we could actually eat the apple because everyone knew it came from Walter!

Follow Us Friday - Hangin' at Home

Roman's schedule was a little out of whack so we spent the day in and around the house.  Just because we stuck close to home doesn't mean we didn't have a blast!

6:45am - Breakfast
Here begins a day on a weird schedule!  Not really sure why Roman woke up so early this morning but he was in a fairly good mood so who can complain.  I wasn't even really sure where my camera was yet this morning so I didn't snap any pictures of Roman's waffle, berries and milk or my toast and milk. 

7:15am - Dressed, dressed, dressed
Lately this has been a bone of contention between Roman and I.  I'm not sure what has changed in the last few weeks but clearly the change table has morphed into a torture device.  A torture device that only affects you when you are laying down, as sitting and standing are still pain free ways to interact with this piece of furniture.  Roman has a new affinity for the trains behind our house and looks for them every chance he gets.  Roman also discovered a monster under his bed!  Only this monster is a pit bull and I think Roman would be much safer with this guy sleeping under his bed than your average monster.

7:30am - Play time and morning cartoons!
After taming the pit bull under the bed we made our way to the living room to play with cars, which has become a daily event in our house.  We then moved on to some morning cartoons!  We recently revamped our cable subscription so we no longer have Treehouse.  I was a little concerned that Roman wouldn't have any cartoons, not that we watched it that often anyway, but I found PBS Detroit one day and they have cartoons all morning!  Today we watched.....something Tiger?, clearly I was paying attention,  Roman seemed to enjoy it though!  I guess my lap wasn't comfortable enough because he busted out his new favorite chair, which also happens to be his mega block wagon.  What a creative kid I have!
8:30am - Snack
Roman started to get a little cranky around this time and my best guess was that he was hungry.  It's so difficult to know what the little guys want when they can't talk and their schedule is out of whack!  It must have been a good guess because Roman inhaled 3/4 of an avocado and half a yogurt!

9:00am-10:40am - Nap
I was actually a little disappointed that Roman went down for a nap at this time.  Not that he didn't need the nap, because he was heck-a-cranky and really did need it, but we usually go to a play group at 10:00am so we missed it today.  I love taking Roman to the play group at the Y because there are usually a few kids for him to play with, he gets to burn off his energy, and I get to visit with some other moms.  The best part?  100% free!  So we usually go every morning, except today.  Instead I hunkered down to watch some TV and work on some blog posts.

11:30am - Lunch
Roman was pretty excited when he saw that he was having his favorite for lunch, tuna with mixed vegetables and milk.  What more could a boy ask for?  Oh right, cheese and grapes for dessert!  My lunch mustn't have been very good because I don't even remember what it was.....I want to say it was a sandwich but I really have no idea.  I think I need some apple juice - it apparently helps with Alzheimer's.

11:45am - To the depths!
This is an area of the house anyone, other than us, gets to see.  Please don't judge some of the ugly things in the basement!  I swear we are working on making it not look like it's a basement from a horror flick!  We don't spend a whole lot of time in the basement since it is a little cold without flooring and all Roman's toys are upstairs, or at least they were.  Roman has recently wanted to go downstairs a lot and he found his old exersauce toy in the storage room.  He now thinks this is the best toy ever, along with a bunch of cars John let him play with.  Once he got bored of the toys we wandered down to the craft room, where the rest of Roman's toys are scattered.  To distract him from my crafting supplies I pulled out a container of Playdoh from the Halloween stuff for him to play with.  I was impressed that he didn't try to eat it but he didn't think much of playing with it, truthfully I think he enjoyed the container more.  Of course nothing lasts forever and we were on to the next adventure!


12:30pm - Adventuring!
Today was a beautiful, warm fall day!  A perfect day for exploring in a car, on a bike, or by foot.  Or maybe all three!  After a cruise down the street, we traded Roman's car in for his hog and headed off to check out the trains.  Most of the leaves are off the trees now and it makes for some beautiful scenery.  Roman gets such a charge out of the trains and it's so fun to watch him in total awe of them.  Of course we had to visit our four legged friends while we were outside.  Our neighbor poked his head over to fence to tell me he was making sausage and not to panic if we saw smoke coming from behind the shed.  Roman was quite intrigued with the person appearing over the fence, and Bronx was quite intrigued with the smells coming over the fence.


1:00pm - Deliveries and Making Tea
I was so excited when the delivery truck pulled up in front of the house.  Mom and I placed a Steeped Tea order and I had been watching it like a hawk on my UPS tracking app.  I was excited to get my hands on my uptown glass tumbler and Roman was quite excited to get his hands on the air bags and bubble wrap.  He's seen bubble wrap before, but this bubble wrap had the toonie size pockets.  When he realized they popped when he walked on them, utter elation filled his face.  This was honestly the highlight of my day and possibly my week!



I was just about to bust into my tea when another delivery truck pulled up.  I felt so special! Everyone is sending me gifts!  Actually it was a sweater John had ordered but it made me feel special non the less!  Once all the packages were in the house I busted into the tea to make a jug of iced Pink Apple tea for Roman and I.  I love this tea and I love that I can share it with Roman!  Because it's a fruit tea, it actually doesn't have any tea in it, which means Roman can drink it!  A much better option than juice!
2:45pm - Sausage?
While we were playing and waiting for our juice to steep, our neighbor poked his head in the window and said he had some delicious sausage for us!  We honestly have the best neighbors ever!  We've only lived here a year and they're already poking their heads in our windows.  I guess that's what happens when his wife helped me figure out breastfeeding with Roman in the hospital.  Roman was also excited about the sausage, maybe a little too excited.  Poor guy will have to wait until later to get to eat it.  On another exciting note, Roman found his toothbrush!  I have been looking for this thing for over a week and ended up having to buy him a new one on day 2 of the search.  I guess I didn't look hard enough because it was right there in his toy oven.  Hello Mom, how did you not know that?



3:00pm - Nap Time
And the odd schedule continues!  Roman hasn't had two naps in a day in what seems like forever.  Although two naps is nice I do enjoy one long one much better!  But like any mom, I'll take what I can get!

4:15pm - Up and at them!
Recharged and ready to roll, Roman wasted no time getting to his cleaning.  That's right I said cleaning!  Unfortunately he didn't actually clean much.  He did however enjoy spilling his water on the couch and then wiping it up with a t-shirt.


Of course Roman needs a change of scenery every hour or so, so we headed outside again for a bike ride to see the trains.  Are you starting to see why I try to get him out of the house to a play group once a day?  He basically likes to do his few favorite things over and over and over if we're at home all day and it's enough to drive you mad.  Totally random, but does anyone else think their dog looks really naked without their collar?  John actually got Roman hooked on this next activity which is playing in the vehicles.  He loves being able to explore the car, push the buttons, and turn the dials.  Sure my AC was cranked up along with my music but I survived the jolt when I got into the car later on. 


5:30pm - Time for cooking in the kitchen!
Roman still really enjoys helping me in the kitchen and I actually like having him there.  Sure he can't actually help much and I spend half my time retrieving things off the floor, but he's getting really good at learning to stay away from the cutting board and the stove.  They all have to learn eventually so maybe if we start now he'll be cooking supper by 5?  Be a famous chef by 10?  Hey a mom can dream! 

All that cooking made Roman hungry so he sucked back an entire fruit pouch and washed it down with some water from my water bottle.  I have to say that Roman is getting really good at drinking without a sippy cup.  We have officially gotten rid of sippy cups at meal and snack times since he drinks his milk like a pro.  He does enjoy tossing some food into the milk as well but I guess you can't have it all.

Even though it's 20+ degrees outside I'm fighting to keel fall alive.  I had this leaves candle from Bath & Body Works burning in the kitchen all day.  It smells like heaven and it helps cover up the tuna smell from Roman's lunch!

6:30pm - Supper
With John home we can all sit down to supper, which Roman is very excited about.  Tonight I made basa with Spicy Tea-aki spice from Steeped Tea with mixed vegetables.  I was a little worried about what it would taste like but it was actually really good!  It was pretty spicy but even Roman cleaned his plate!  While the boys finished with their supper I got ready for my DanceFit class!

I was so excited for DanceFit!  It was cancelled last week because of Thanksgiving so I was really looking forward to getting back at it.  That being said, you know that feeling you get when your excited for a job interview but your terrified they're going to ask you some impossible question and you'll answer it like a moron?  Ya, that's what I was feeling the entire drive to the field house.  I was a littler terrified that I might just fall over dead in the class.  Luckily I was a little dramatic and I survived, and killed the class.  Point me!


While I was getting my butt kicked, Roman and John were having a blast swimming in the tub.  As always I am not privy to the details of these special events.

7:15pm - Bed Time
Roman went to bed like a stone from what I'm told.  He barely even drank his milk.  This I'm actually excited about because I would like him to start giving up the bottle soon, but I'm not going to force the issue.  He gave up his nap bottles on his own so I'm sure he'll do the same with the night bottle when he's ready.

After DanceFit there is nothing better than a glorious shower and a face mask!  Sorry Trellyn no photo this time!  John of course had his nightly cup of Early Grey De La Crème tea but I decided to pass tonight.  I think my body was still in shock from the class and just wanted plain ole water.

Chocolate Covered Halloween Cookies

Since I'm trying to get more into the Halloween spirit for Roman, I decided to make some Halloween treats!  I wanted to make something easy that wouldn't take up an entire day - I'm all for getting in the Halloween spirit but I'm willing to sacrifice an entire day just yet.  Chocolate covered Oreos seem to be the new "in" thing so I thought I'd make my own version. 


Like all great baking adventures I started by heading to Bulk Barn with Roman to pick up supplies.  I like shopping at Bulk Barn because I can buy only the quantity I need, which is handy when it comes to more expensive items because then I don't end up with a bunch of leftovers that I won't use.  Plus I know I'll only have to make one stop and they will have everything I need.  I ended up leaving the store with melting chocolate, a few kinds of sprinkles and some PeekFreans cookies.

The best way to melt chocolate is with a double boiler.  I usually just melt it in a pot and really haven't had any trouble with it.  When John saw me with chocolate in the pot he said "I don't know much about chocolate, but aren't you supposed to use a double boiler?".  I responded that you should but I never do and I've never burnt my chocolate.  Well, guess what happened today.  Yup, I burnt the chocolate.  I guess that's what happens when you get cocky.  So I started again by bringing a couple inches of water to a boil in a pot and sitting a glass bowl on top.  I added the chocolate and stirred until it was completely melted.  You want to be careful not to over heat it as your chocolate will start to get lumpy and thick.  When the chocolate is almost melted, reduce the heat to bring the water down to a simmer.  This will keep your chocolate warm but not overheat it.


Using my lovely BBQ tongs (it's the only pair of tongs I own) I dipped and flipped the cookies in the chocolate until they were completely covered in chocolate.  Grab the cookies with the tongs again and shake off as much of the excess chocolate as you can.  Be warned, if you shake too hard you may break your cookie!  I found out the hard way.  Place the cookie on a parchment lined cookie sheet.  If your tongs left marks in the chocolate, use a knife or an icing spatula to spread the chocolate around to cover the marks.  If there are areas that aren't covered as well as you would like you can also spread on more chocolate just as if you were icing a cake.  Finally, top the cookies with your sprinkles or other decorations while the chocolate is still soft.


For the pumpkin cookie decorations I used pecans and pumpkin seeds for the stem and leaves.  To make the stem I cut the point off a pecan half and stuck it onto the top of the cookie along with pumpkin seeds on either side of the stem.


The chocolate will take a couple of hours to harden so you'll have to be patient.  Or you can pop them in the fridge and you'll get to indulge in the chocolatiness that much faster!  Now you're probably wondering what you should do with the leftover melted chocolate.  This chocolate isn't cheap so I save every last drop - here's the trick!  Lay a piece of plastic wrap in a cereal bow and scoop in any leftover chocolate while it's warm.  Allow the chocolate to completely harden then just remove it from the bowl, peel off the plastic wrap, and store it in a sandwich bag.  When you want to use it again, cut the lump into small chunks and warm it in a double boiler again.  Oh and don't worry about the chocolate on the tongs, just lick that off, consider it your reward for making other people such delicious cookies!
 
The possibilities for this type of treat are endless, so get creative and make some spooky cookies for Halloween!
